The Dipping Lugger sits on the shores of Loch Broom in Ullapool. The property began life as a manse in 1789. In 2018, owners Robert Hicks and Helen Chambers purchased the building and set out to transform it into a luxury restaurant with boutique rooms.
Their vision focused on preserving the building’s character while creating a distinctive hospitality experience. JCA Consulting’s Interior Design Director, Eve Cullen-Cornes, developed a design concept rooted in the building’s history. Each room reflects the heritage of the property and creates a memorable guest experience.
The property offers three ensuite guest bedrooms. Each room takes its name from a figure connected to the building’s past: MacInnes, Melville, and Telford. These names reference former owners, the original builder, and the engineer responsible for rebuilding work in 1829.
The interiors combine heritage character with modern comfort. Large beds feature crisp white cotton sheets, tartan throws and velvet cushions. Refurbished fireplaces create strong focal points in each room.
Decorative wallpapers from Cole & Son, Juliet Travers and Morris & Co. add colour, texture and depth to the spaces.
Each ensuite bathroom includes a freestanding bathtub and decorative tiling. These features create a relaxing and indulgent space for guests.
Upstairs, guests discover a distinctive feature within the property: the “Sweet Shop”. This playful space offers a collection of nostalgic sweets and drinks. It provides the perfect setting for a nightcap after dinner.
The drawing room provides a space for residents to relax before or after dining. Rich materials and period details define the interior.
Dark parquet flooring grounds the room. Olive leather wingback chairs and an antique velvet sofa provide comfort and warmth. A traditional fireplace creates a natural focal point.
The space features the striking ‘Boscobel Oak’ wallpaper from Cole & Son. The design includes gold leaf detailing and heraldic lion motifs that reinforce the historic character of the building.
The restaurant offers seating for just 18 guests. The interior creates an intimate and immersive dining atmosphere.
Wallpaper from Morris & Co. forms the backdrop to the dining space. Eve introduced an unexpected element by incorporating music promotional posters from Robert and Helen’s company, Beyond Presents. These pieces add personality and contrast within the design.
Within the restaurant, JCA created a dedicated Tasting Room. This smaller dining area accommodates two tables and provides a more private experience.
Guests can enjoy curated tasting menus while sampling Seven Crofts gin from the Highland Liquor Company. The gin is owned and produced locally in Ullapool by the restaurant’s owners.
