When Great British Menu winner Nick Beardshaw set out to open his first restaurant, he had a vision that extended beyond the kitchen. He wanted a space that would match the creativity of his dishes. A place where atmosphere and design would play as much of a role as ingredients and flavour. That’s where JCA’s Interior Design Director, Eve Cullen-Cornes, stepped in.
Located in the heart of Esher, Surrey, Starling is intimate, seating just 40. But it feels expansive. Not in size — in experience. Eve took inspiration from the restaurant’s name and the movement of starling birds. She translated this into a space that feels alive, warm, and full of intention.
The royal blue exterior makes a bold first impression. Inside, soft woody tones and gold leaf accents create a feeling of understated elegance. Eve layered natural textures and rich materials to bring depth and warmth to every corner.
One of the most striking features? Hammered metal starlings, suspended as pendant lights. They drift above the dining room, frozen in mid-flight. They do more than light the space — they capture the spirit of the restaurant. Movement. Community. Togetherness.
Each element works in harmony. The lighting is soft and moody, casting a golden glow across marble surfaces and velvet banquettes. The finishes feel tactile. The space invites diners to slow down. To savour. To stay.
The design doesn’t compete with the food. It complements it. The interior sets the tone before a single dish reaches the table. It tells its own story — one of craftsmanship, creativity, and care.
Eve Cullen-Cornes has created more than a restaurant interior. She has built a setting that frames every meal with beauty and balance. Starling isn’t just a place to eat. It’s a place to be.
